Allow our panel of professional brewers will explain the difference between a base and a specialty malt, an ale and lager yeast, a bittering and aroma hop, and how water influences all three.

11.45pm- Sensory development for the homebrew- Mort Piripi Mort, a certified National level beer judge, will introduce you to the concept of "sensory analysis" and how tasting differs from drinking. You'll sample three beers displaying common faults, while Mort explains how to recognise each, how they occur, and how to avoid them. *GBW to provide fault kits and beer

12.45pm- Lunch and beers sponsored by Moon Dog Brewing

1.15pm- Short Form All-Grain Brewing Demo- Geoff Hammond (Grain and Grape) Stepping up from extract brewing to "all-grain" reduces ingredient cost and offers an incredible control over, and variety of flavour, aroma and mouthfeel. Grain & Grape's single-vessel brewing ambassador will demonstrate all grain brewing at quadrupel speed!

2.15pm- Recipe development- Stephen Allerston (BrewDog) and Steve Henderson (Brewcult) Learn how to interpret recipes or design your own with hardcore recipe geeks Stephen (NPD at BrewDog) and Hendo (Brewcult). Design a beer with them which will be brewed and sold as fresh wort kits at Grain & Grape!

Shortly after the completion of the Symposium, the Cryer Malt Business Suite will be turned into a homebrew club open day and "SMASH Challenge" - where you can taste "Single Malt And Single Hop" beers showcasing Australian hops and worldly malts - and meet the Victorian homebrew clubs and award winning homebrewers that are ready and willing to take you under their wing!

Attendees are encouraged to vote for their favourite SMASH beer, with the champion club (by popular vote) winning the opportunity to brew a single keg of beer with Moon Dog in Abbotsford. Grain and Grape has kindly donated a voucher for a door prize for some luck voter to help kickstart their brewing journey.
